Built from relationships that are inspired by innovation and tradition, we continue the story of Fumé Blanc—this being the first kosher wine to be produced on our estate property. With warm days and cool nights, the white (blanc), smoke-like vapor (Fumé) transcends through the valley and grounds us in hope.
In the Jewish faith, it’s thought that wine is the most complex process and that the winemaker has much influence over the outcome. To achieve ‘spiritual purity’, a Rabbi or Mashgiach is appointed to supervise beginning at the time the berry breaks. This exceptional medium-bodied wine from Winemaker Dan Levin is made with 100% Sauvignon Blanc—which is barrel fermented and aged for 10 months—and boasts notes of jasmine flower, key lime pie, vanilla, and white pepper. Pair this special bottle with creamy cheeses like Brie, halibut with lemon cream sauce and salmon over baked risotto with herbs and lemon.
